Vegan "Spitzbuben" - A Very Sweet Seduction
It's beginning to look a lot like Christmas! And with it, the annual gourmandising goes into the next round. What would Christmas be without filling your stomach to the top with Christmas biscuits? For me, that has always been the personal highlight of the pre-Christmas season. Let's face it: the time before the festive season is much nicer than running from one family party to the next once the "big days" arrive.
"Spitzbuben" are one of my absolute favourites among Christmas biscuits. While biscuits are usually rather dry in nature, the jam that is squeezed into these cookies gives them a very creamy taste. I hope this recipe will make you extra "Christmassy" this year. A little tip: You can sweeten up your baking marathon with a Christmas playlist or a Christmas audio book 😊
Ingredients
For a large biscuit tin
250g margarine
250g sugar
3 eggs (substitute)
1 pinch of salt
1 lemon (zest and juice)
approx. 600g flour
Some jam (I use strawberry)
Some icing sugar for decorating
Preparation
- Mix butter with sugar.
- Add eggs, salt and lemon.
- Add flour and mix well until a smooth dough is formed. Refrigerate overnight.
- The next day, roll out the dough to a thickness of approx. 2mm, cut out with "Spitzbuben" moulds and bake in the oven preheated to 200°C for 6-8min.
- Allow to cool and fill the biscuits like a sandwich with jam of your choice, sprinkle with icing sugar and store in a biscuit tin until ready to eat.
