Vegan "Mailänderli" - My Absolute Favourites

What would Christmas be without "Mailänderli"? Next to the “Spitzbuben”, these are the most delicious Christmas biscuits for me - which hardly surprises me, as I use exactly the same dough for both varieties. Although they take a little longer to prepare, as the dough should be refrigerated overnight, the cookies are still easy to make. What's more, you don't need any fancy ingredients that you have to buy separately. I usually already have everything in my cupboard and can get started straight away.

What can I say... How can you not love Christmas?

Ingredients

For a large biscuit tin

  • 250g margarine
  • 250g sugar
  • 3 eggs (substitute)
  • 1 pinch of salt
  • 1 lemon (zest and juice)
  • approx. 600g flour
  • A medium bowl of icing sugar
  • Some water
  • Decoration (to taste)

Instructions

  1. Mix butter with sugar.
  2. Add the eggs, salt and lemon.
  3. Add flour and mix well until a smooth dough is formed. Refrigerate overnight.
  4. The next day, roll out the dough to a thickness of approx. 5 mm, cut out with dough moulds and bake in an oven preheated to 200°C for 6-8 minutes.
  5. Mix icing sugar with a little water to make a glaze. It is better to start with just a few drops of water and gradually add more if necessary. I usually experiment a bit until I find the right consistency.
  6. Allow to cool and decorate the biscuits with icing sugar and a little sprinkling if you like.
