Vegan Gingerbread Bears with Chocolate Icing
I have to admit, I'm definitely not a professional baker when it comes to decorating Christmas biscuits 😊 but it's not hard to tell from the pictures. I can tell you though that the cookies are really delicious! I combined these vegan Gingerbread Bears with a chocolate icing - tastes delicious! Unfortunately, they turned out a bit too thick for me, as I didn't consider that they would rise a bit in the oven with the baking powder. So, it's better to roll out the dough a little thinner. Unfortunately, I didn't have any bigger moulds, so I had to use baby bears. But again - it's all in the taste, right?
Ingredients
For a medium sized biscuit tin
140g vegan butter
100g sugar
1 egg substitute
1 lemon (zest)
1 pinch of salt
300g flour
1 tbsp soy milk (or other vegetable alternative)
3 tsp gingerbread spice
½ packet baking powder
100g dark chocolate
If desired, some icing sugar, water and food colouring for the decoration
Preparation
- Mix the butter, sugar, egg replacerand salt to a mixture.
- Grate the zest of one lemon and addto the mixture together with the flour, gingerbread spice and baking powder.Mix well and chill for at least 30 minutes.
- Roll out the dough to a thickness ofapprox. 3mm and cut out with gingerbread moulds.
- Bake the biscuits in a preheatedoven at 200°C for 8-10min. Remove and leave to cool.
- In the meantime, melt the chocolateover a hot water bath and decorate the biscuits with it. Leave the biscuits tocool again.
- If you like, you can get a littlecreative here and give the biscuits some eyes or clothes with icing sugar(which obviously didn't work out so well for me 😊).
