Low-carb Porridge with Plums

Porridge has been one of my all-time favourite breakfast options for quite some time now. I love experimenting with different ingredients and toppings. But the ingredients I always come back to are cinnamon and peanut butter. I’m not quite sure what it is about that nutty, slightly oriental flavour that makes it so special, but for me, it’s hard to beat.

Having always made my porridge the traditional way with oats or millet flakes, this time I wanted to try my hand at a low-carb version – and I have to say that, for my taste, it turned out a success.

Ingredients

For one portion

  • 10 g chia seeds
  • 10 g flaxseeds
  • 10 g hemp seeds
  • 1 tsp sesame seeds (light)
  • 1 tsp erythritol
  • 1 tsp cinnamon
  • 150 ml soy milk (or any other milk)
  • 1 plum
  • 1 handful of raspberries
  • 1 tsp peanut butter
  • 1 tsp cacao nibs

Instructions

  1. Mix the chia seeds, flaxseeds, hemp seeds, sesame seeds, erythritol and cinnamon together well in a small saucepan.
  2. Add the soy milk (or any other milk) and stir everything together well until there are no lumps left.
  3. Bring to the boil over a medium heat, stirring occasionally, then reduce the heat.
  4. Simmer gently over a low heat for 5–10 minutes, stirring regularly to prevent it from sticking. The mixture will gradually thicken.
  5. Turn off the hob and leave the saucepan, covered, on the warm hob. This allows the seeds to continue swelling and makes the porridge nice and creamy.
  6. Spoon the porridge into a bowl.
  7. Cut 1 plum into wedges and scatter over the porridge along with the raspberries, peanut butter and cacao nibs.

Tip: If you like it really creamy, you can use double cream instead of milk when making it.
