Gluten-free Pear Crumble with Millet and Coconut

This recipe has been sitting in my blog folder for quite some time now, and I can still remember that I came up with it at a time when I was starting to incorporate new foods into my diet and cutting out certain other ingredients to see how my body would react. For example, I started experimenting more with pears instead of apples – and had to admit to myself that, up until then, pears had definitely been neglected in my diet.

If you prefer, you can also replace the millet flakes with oat flakes, the coconut oil with butter and the coconut flour with oat flour.

Ingredients

Makes one medium sized casserole dish

‍

For the pears

  • 800g pears
  • 2EL lemon juice
  • 1 pack vanilla sugar
  • 1TL cinnamon
  • 1 pinch of salt

‍

For the crumble

  • 80g rolled oats
  • 80g coconut flour
  • 75g maple syrup
  • 100g coconut oil, buttery consistency

Instructions

  1. Preheat oven to 200 degrees.
  2. Cut pears into cubes and mix with lemon juice, vanilla sugar, cinnamon and salt.
  3. Mix all ingredients for crumble in a second bowl.
  4. Grease the baking dish with a little more coconut oil.
  5. Pour in the pears first, then generously cover the fruit with crumble.
  6. Bake for 20 minutes, keeping an eye on it from time to time, turning down the temperature if necessary.
