Creamy bacon-wrapped chicken

I can still clearly remember one of the first dishes we made as teenagers in our school cookery lessons. I raved about it so much when I got home that my mum also started whipping up these incredibly juicy and delicious bacon-wrapped chicken breasts on a regular basis.

I can’t remember the exact recipe from those cooking lessons, but it’s so simple and uses so few ingredients that it’s easy to recreate. This has been one of my boyfriend’s absolute favourite dishes for quite some time now, and we’ve cooked it for friends on several occasions. It’s perfect for a dinner party, as it tastes really good and is also incredibly easy to prepare. Just pop it in the oven and, in the meantime, you can enjoy spending time with your guests. It goes best with pasta and freshly cooked vegetables – but since we’ve been cutting down on carbohydrates as much as possible, the two of us simply eat it on its own without any side dishes.

Ingredients

Serves 4 people

  • 4 chicken breasts
  • 200g slices of bacon
  • 250ml double cream
  • Salt
  • Pepper
  • Paprika
  • A handful of fresh parsley (dried parsley works too)
  • A handful of fresh chives (dried chives work too)

Instructions

  1. Preheat the oven to 200°C (top and bottom heat).
  2. Pat the chicken breasts dry and season on both sides with salt, pepper and paprika.
  3. Wrap each chicken breast in 2–3 slices of bacon so that it is completely covered. Place the bacon ends facing downwards so that they do not curl up during baking.
  4. Place the wrapped chicken breasts side by side in a gratin dish or baking tin.
  5. Pour the double cream evenly over the chicken.
  6. Place the dish on the middle shelf of the preheated oven and bake for approx. 40–45 minutes, until the chicken is cooked through and the bacon is nice and crispy.
  7. Finely chop the parsley and chives (if using fresh).
  8. Remove the cooked chicken breasts from the oven, sprinkle with the herbs and serve immediately.
  9. Tip: A little grated Gruyère on top adds that extra special touch to the dish.
